NUTRIOSE^®: an interesting substitute for resistant starches in a wide range of food applications...

In the world context of epidemic obesity, and as discussed by renowned scientists, reduction of dietary fat is an important tool for prevention and also treatment of weight-linked health problems. Nevertheless, fat in diet is not the only target to fight, and notably diabetes is a very common complication of obesity.

Consequently, use of low GI foods and ingredients has been widely studied for their potential interest in healthy diets, for example for preparing meals with better post-prandial and inter-prandial glycemic profiles.

In this context, EUROSTARCH is a European research project that aims at elucidating and optimizing the health-related properties of various starchy foods and ingredients. In Groningen, 27th and 28th of April 2006, the final meeting of this European research committee took place, and the results obtained by the different participants of the program were presented before a panel of scientific experts and food companies.

Roquette Frères was present at this Symposium and took the opportunity of presenting a poster showing the properties of NUTRIOSE^® the closest to some of the resistant starches. The poster was composed in three parts showing the interest of NUTRIOSE^® as a food soluble fiber and a resistant dextrin, with low GR and outstanding tolerance.

The first part was about its chemical structure explaining the digestive pattern of NUTRIOSE^®,
the second part about the glycemic response of foods products including NUTRIOSE^® in their composition,
and the last, about its technological properties.

In reality, added to its low viscosity, its very good solubility, and its resistance to heat and pH treatment, the nutritional properties of NUTRIOSE^® make it an interesting substitute for resistant starches in a wide range of food applications and as a key ingredient easy to be used in the world context of obesity.
