
For the first time an international competition dared to challenge an ancient and universal symbol of food – bread – by requiring competitors to use an up-to-the-minute approach that combined both gastronomic and health criteria. Limiting competitors to artisan bakers, the new competition was set up by the Association of the Bread Ambassadors and the French Bakery Trade, and took place in the context of the SIRHA* Exhibition on January 20 and 21 last.

The competitors had eight hours in which to make their various breads. Fabien Poncet, an artisan baker based in Lyons, represented France. His nutritional bread was made from spelt flour (recognised for its high fibre and protein content and the best bio-availability of vitamins and minerals), sunflower seeds, linseeds (rich in Omega 3) and NUTRIOSE®. The latter enabled Mr. Poncet to create a bread with a total fibre content of over 6% while allowing the qualities of the other ingredients to be fully expressed. The nutritional characteristics of the bread fully satisfied the criteria laid down by nutritionists and the recommendations of public health bodies. It was the uniquely satisfying taste of the French team’s bread that won over the jury.
