Multi-role ingredient
NUTRIOSE® is a range of soluble dietary fibers produced from corn or wheat starch. Endowed with an excellent digestive tolerance factor (probably the best on the market), the NUTRIOSE® range has three general uses:
- calorie reduction (specifically of sugar and fat)
- fiber enrichment
- extended energy release
The health image of dairy products makes them ideal candidates for NUTRIOSE® soluble fiber. This is complemented by the beneficial ways in which NUTRIOSE® (see graph) is digested:

Neutral taste for tastier products
As well as promoting health, NUTRIOSE® helps safeguard the taste of traditional products. It is itself neutral in taste. At the same time, it can mask the after-taste produced by certain intense sweeteners that are common in dairy products. It also heightens the sensation of smoothness and creaminess.
NUTRIOSE® thus makes it possible to make dairy products of high nutritional value that also offer an outstanding level of gustatory satisfaction.
In addition, NUTRIOSE® offers a great number of technological advantages, making it even more attractive to dairy product makers:
- stability under process conditions:
- at low pH, for long periods (demonstration trial: pH 2.5 for 90 days at 20°C)
- heat treatment (sterilization, pasteurization, UHT treatment, cooking, etc)

- easy to use on traditional equipment
- high dispersibility and solubility
- low sensitivity to ambient hygroscopicity
A few examples of applications:
- Fully skimmed milk enriched with NUTRIOSE® (15 g/l) offers the creamy, smooth texture of half-skimmed milk, simultaneously allowing a "high in fiber" claim to be made that meets international fiber consumption recommendations (30 g/d).
- The general health benefits of fermented milks are combined with direct benefits to the colon, when the prebiotic effect of NUTRIOSE® is combined with specific probiotics (type: Lactobacillus GG, Lactobacillus casei, Bifidobacterium essensis).
- Low-fat and low-sugar dairy desserts; the enhancing fiber contributed by NUTRIOSE® also imparts outstanding organoleptic qualities.
