    Partial fat substitution helps to improve the mouthfeel and creaminess of the end product, as following example shows:

    In a tomato soup initally containing 3% fat, Roquette food technologists replaced 2/3 of the fat content by NUTRIOSE® FB06. From a sensory evaluation it emerged that the soup using NUTRIOSE® FB06 exhibited  improved creaminess and spoonability in comparison with the control product. 
  • NUTRIOSE® offers the additional advantage of leaving the taste of the final product unaffected.

Technical properties

  • Outstanding resistance

    NUTRIOSE® maintains its functional properties under extreme processing conditions, such as high shear, retort processing and frozen storage.

    In addition, NUTRIOSE® is highly resistant to thermal treatments (pasteurization, sterilization) and offers excellent fiber retention over a wide pH range. This guarantees that fiber content remains unchanged throughout end-product shelf life.

    Applications such as liquid soups, sauces (pasta, ketchup), side dishes and dressings take advantage of beneficial properties like these.

    NUTRIOSE® is easy to formulate thanks to its high dispersability and solubility, a critical factor for applications such as wet sauces.
