Jams, fillings and fruit preparations contain many simple sugars that public health objectives recommend be reduced. Sugars, however, are essential for providing the necessary mouthfeel and therefore require replacing rather than reducing.
Combined with MALTISORB® maltitol, NUTRIOSE® fiber is an easy approach to sugars substitution in many recipes. It also reinforces the health image already conveyed by the product's inherent fruitiness

Low in calories, NUTRIOSE® allows important levels of sugar substitution (up to 100%). NUTRIOSE® can also be sugar-free.

Technical properties
NUTRIOSE® is characterized by high stability. It is pH-resistant and tolerates heat treatments such as pasteurization.
Applications
- Reduced-sugar jams, stuffing, and fruit fillings for biscuits
- Dairy-based fruit preparations: these contain about 20% to 60% sugars, making it especially easy and advantageous to achieve sugar/caloric reductions using NUTRIOSE®.
