Target
The target is to obtain a sugar-free sweet with a very chewy and elastic texture, which can be chewed for a long time. Standard chews are slightly elastic but tend to dissolve quickly in the mouth.
Technical aspects
Chewiness and duration in the mouth can be obtained with the use of NUTRIOSE® FB or FM 06 dextrin (soluble fibre), the optimization of fat content, and the appropriate ratio between liquid and crystalline phases of the candy. This chewy texture can even be obtained without gelatin (gelatin is replaced with a low DE maltodextrin, GLUCIDEX® 2).
