Protection against oxidation

Due to its very specific technological properties (molecular weight, molecular structure, tasteless) NUTRIOSE® is well known as a carrier and a protective agent against oxidation for flavors, polyunsaturated fatty acids (such as omega-3, omega-6…), oil soluble vitamins and other very sensitive fatty materials. Its ability to protect against oxidation, which can even be enhanced thanks to NUTRALYS® pea protein, allows organoleptical and nutritional properties of food to remain unchanged throughout product shelf life.
